CLAM DIP

This reminds me of something they would serve on Mad Men!

Growing up my Mother served this at all her parties.  It was a staple in the house so to speak.  Now,  it's the best thing with a Bloody Mary for the "morning after"!!


1 pkg of cream cheese softened

1 can of chopped clams (drain but save the juice)

Salt, pepper, garlic salt

1 TSP of lemon juice

On medium speed, beat the cream cheese slowly adding some of the clam juice to make it creamy.  Whip on hi-speed for 1 min.  Add in remaining ingredients beating on low to mix well.  Serve with a bag of ruffles!!!

GUACAMOLE

5 Avocado's

1 cup shredded cheddar cheese

1 small red onion chopped

2 cloves of garlic minced

1 TBLSP cilantro chopped

Juice of 1 lime

3/4 cup of sour cream

Salt and pepper to taste along with dash of hot sauce.

Peel and mash avocado's in a bowl.  Add onion, garlic, cilantro, salt, pepper, hot sauce, and lime juice.  Mix well.  fold in sour cream and cheese.  Keep and avocado seed in dip to prevent from turning brown.

appetizers and small plates.....

Add a small slice of brie to each artichoke bottom, then add a spoonful of mushroom/shrimp mixture.  Garnish with lemon wedges.  Can serve immediately or chill before serving.

STUFFED ARTICHOKE BOTTOMS


1 can water packed artichoke bottoms (rinse,drain, pat dry) Place on serving dish

1 clove garlic minced

1/4 lb of salad shrimp

2 lemons

1 pkg of mushrooms

2 scallions

1/4 cup of shredded parmesan cheese

1 TBLSP olive oil

salt

lemon pepper

wedge of brie cheese

In a med. sauce pan, heat oil and saute garlic for a few mins, then add mushrooms and saute till water is out of them.  Add scallions to heat them up. Add lemon pepper and salt to taste.  Squeeze the juice of 1 lemon and then add shrimp.  Mix well and remove from heat and add parmesan cheese.
